No Fry Paleo Meatballs

I’ll admit it, I love cooking with minced meat. My preference is for beef, but lamb works well too. This recipe from the Hemsley sisters is particularly simple and tasty as it requires no frying, which means no need to clean the stove and the backsplash after the event. The carrots give it a lovely sweetness and moisture. The mixture can be made into burger patties or meatballs.

Serves 4-5 but you could easily double it and freeze some for another meal.

Ingredients

  • 500 gram minced beef (full fat) or lamb

  • 2 large carrots - grated

  • 1 large onion - grated

  • 3 cloves of garlic - finely diced or minced

  • 1 large handful of fresh parsley or coriander- leaves and stalks finely chopped

  • 1 1/2 teaspoons ground cumin

  • 2 teaspoons sweet paprika (smoked optional)

  • 1/4 teaspoon chilli powder

  • 2 tablespoons chopped pickled jalapeños - optional

  • 1 teaspoon chopped fresh thyme or oregano leaves (or use dried herbs)

  • 1 egg - lightly beaten

  • sea salt and black pepper to taste

Method

  1. preheat the oven to fan 200 Celsius / 390 Fahrenheit and line a baking tray with baking parchment

  2. Place all the ingredients in a large bowl and mix together with your hands. Add salt and pepper to taste.

  3. Take large handfuls of the mixture and shape into patties or roll smaller tablespoon-sized portions into meatballs.

  4. Place on prepared tray, spaced apart, bake for 30 minutes for patties or 20 minutes for meatballs or until cooked through.

Serve with a big leafy salad or a coleslaw and a bowl of guacamole! Yum.
