How to prepare broccoli

Broccoli is a wonderful tasty vegetable belonging to the cruciferous vegetable family, it is full of nutrients including important vitamins. Half a cup of cooked broccoli has 51mg of Vitamin C, which is about a third of the optimal intake for men and women per day. It is also a good source of beta-carotene, a precursor to vitamin A and a potent antioxidant, as well as folate, a B vitamin that is essential for the production of DNA. Broccoli is also high in both soluble and insoluble fiber. For many people insoluble fiber causes stomach pain and gas, so peeling the stem of the broccoli and steaming it until it has lost its hardness, will be easier on your digestion.
